The Recipe
Ingredients:
3–4 overripe bananas, mashed
½ cup yogurt (plain or vanilla)
2 large eggs
1 stick (½ cup) melted butter
1 teaspoon vanilla extract
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
2 ½ cups all-purpose flour
Instructions:
Preheat the oven: Set your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.
Mash the bananas: In a stand mixer or large bowl, mash the bananas until smooth.
Mix the wet ingredients: Add the yogurt, eggs, melted butter, and vanilla extract to the mashed bananas. Beat until fully combined.
Add the dry ingredients: Gradually add the sugar, salt, baking soda, and flour to the wet ingredients. Mix just until everything is incorporated—don’t overmix!
Bake: Pour the batter into the prepared loaf pan. Bake for 45–60 minutes, or until a toothpick inserted into the center comes out clean.
Cool and remove: Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
