The Recipe

Ingredients:

  • 3–4 overripe bananas, mashed

  • ½ cup yogurt (plain or vanilla)

  • 2 large eggs

  • 1 stick (½ cup) melted butter

  • 1 teaspoon vanilla extract

  • 2 cups sugar

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 2 ½ cups all-purpose flour

Instructions:

  1. Preheat the oven: Set your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.

  2. Mash the bananas: In a stand mixer or large bowl, mash the bananas until smooth.

  3. Mix the wet ingredients: Add the yogurt, eggs, melted butter, and vanilla extract to the mashed bananas. Beat until fully combined.

  4. Add the dry ingredients: Gradually add the sugar, salt, baking soda, and flour to the wet ingredients. Mix just until everything is incorporated—don’t overmix!

  5. Bake: Pour the batter into the prepared loaf pan. Bake for 45–60 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool and remove: Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
