I love to make a big batch of soup on Sunday and then enjoy the leftovers all week! It goes perfectly with chicken, grilled cheese, a salad, or you could even add rice, quinoa, or lentils!
The Recipe
Ingredients:
1 tablespoon olive oil or butter
1/2 a stick of butter
1 onion, diced
2-4 cloves garlic, minced
10-20 large carrots chopped (I buy the large organic bag of carrots from Costco and use a quarter to half of the bag, which soups like a lot but it makes about 12 servings of soup)
Optional opt half of the carrots for butternut squash. It will make the soup even creamier
2 sweet potatoes, peeled and chopped
5 stalks of chopped celery
4-6 cups chicken broth (enough to cover everything in the pot)
1 teaspoon yellow curry seasoning
½ teaspoon dried oregano
2 teaspoons salt (adjust to taste)
1 teaspoon black pepper
1 Can of White Beans (can not even taste them and they add amazing protein)
1/2 cup of lentils
Optional ½ cup coconut milk or heavy cream (optional I did not use, but will add extra creaminess)
Fresh herbs for garnish (such as cilantro or parsley)
Instructions:
Sauté the aromatics: Heat the olive oil or butter in a large pot over medium heat. Add the diced onion and garlic, sautéing until softened and fragrant, about 3–4 minutes.
Add the vegetables: Stir in the chopped vegetables and seasonings. Cook for 5-30 minutes to let the vegetables start to soften.
Add the broth, beans, lentils, and seasonings: Pour the chicken broth, ensuring the vegetables are fully covered. Bring to a boil, then reduce the heat to a simmer. Cover and cook for about 30 minutes or until the carrots and sweet potatoes are fork-tender.
Blend the soup: Remove the pot from the heat. Blend the soup directly in the pot using an immersion blender until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
Add creaminess (optional): Stir in the coconut milk or heavy cream for an extra creamy texture.
Serve: Ladle the soup into bowls and garnish with fresh herbs, a drizzle of olive oil, or a sprinkle of cracked pepper.
