The Recipe: Cherry Cobbler with Oat Topping

For the Cherry Filling:

  • 4 cups pitted cherries (fresh or frozen)

  • ¼ cup honey or granulated sugar (adjust to taste)

  • 1 tbsp lemon juice, optional a little lemon zest

  • 1/4 cup flour

  • ½ tsp vanilla extract

  • 1/2 teaspoon of cinnamon

  • Pinch of salt

For the Simple Oat Topping:

  • ¾ cup old-fashioned oats

  • ½ cup all-purpose flour

  • ā…“ cup brown sugar (or coconut sugar)

  • ½ tsp cinnamon

  • ¼ tsp salt

  • 6 tbsp cold butter, cubed

Instructions:

  1. Preheat oven to 350°F and lightly butter a 9-inch baking dish, pie dish, cast iron skillet.

  2. In a medium bowl, stir together cherries, honey, lemon juice, flour, vanilla, and salt. Pour the mixture into the prepared baking dish.

  3. In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Add cold butter and cut it in using a fork or your fingers until the mixture forms coarse crumbs. If ypu prefer, you can combine the topping into a kitchen aid mixer and mix until crumbs form.

  4. Sprinkle the oat topping evenly over the cherry mixture.

  5. Bake for 35–40 minutes, or until the filling is bubbling and the topping is golden brown.

  6. Let cool for 10–15 minutes before serving.
