With fresh cherries folded into a soft, buttery batter and a crunchy cinnamon sugar topping, itās a simple bake that feels like something straight from a country bakery.

The Recipe: Cherry Coffee Cake with Cinnamon Sugar Topping
Ingredients: For the Cake:
½ cup (1 stick) unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ tsp almond extract (optional but amazing)
1 ½ cups all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup milk
2 cups fresh cherries, pitted and halved
For the Cinnamon Sugar Topping:
¼ cup granulated sugar
1 tsp cinnamon
Instructions:
Preheat your oven to 350°F. Grease and flour an 8Ć8-inch baking dish or line with parchment. Or use a round cake pan.
In a mixing bowl, cream together butter and sugar until light and fluffy.
Beat in eggs, vanilla, and almond extract.
In a separate bowl, whisk together flour, baking powder, and salt. Add to the wet ingredients alternately with milk, mixing until just combined.
Fold in halfĀ the cherries. Spread batter into the prepared dish.
Scatter the remaining cherries over the top.
Mix cinnamon sugar topping ingredients in a small bowl and sprinkle evenly over the cake. Optional, if cinnamon sugar is not for you, add lemon zest into the batter instead. It is just as delicious and a great alternative.
Bake for 35ā40 minutes or until a toothpick inserted in the center comes out clean.
Let cool slightly before slicing. Serve warm or at room temp. Add some powder sugar on top before being served.
