The Recipe: Cottage Cheese Bagels & Olive Cream Cheese
For the Bagels (Makes 8 small bagels):
2 cup cottage cheese
1 egg
4 cups all-purpose or whole wheat flour
4 tbsp baking powder
½ tsp salt
Toppings (Optional):
Egg wash (1 egg beaten with 1 tbsp water)
Everything bagel seasoning, sesame seeds, or poppy seeds
For the Olive Cream Cheese:
8 oz cream cheese, softened
½ cup green olives, finely chopped
Optional: pinch of garlic powder or chopped parsley
Instructions:
Preheat oven to 375°F and line a baking sheet with parchment.
In a blender or food processor, blend the cottage cheese until smooth. Pour into a mixing bowl and stir in the egg.
Add flour, baking powder, and salt. Mix until a dough forms.
Turn out onto a floured surface and knead briefly until smooth. Divide into 8 equal portions.
The best way to shape this sticky and delicate dough is by forming a ball and using your finger make a hole in the middle.
Brush with egg wash and sprinkle with toppings if using.
Bake for 20–25 minutes or until golden brown and cooked through.
While they bake, make the Olive Cream Cheese:
In a bowl, mix softened cream cheese with chopped olives, olive brine, and pepper until well combined. Add garlic powder or parsley if desired.
Chill until ready to use—or serve immediately!
