¾ cup graham cracker crumbs
1 tablespoon sugar
Pinch of kosher salt
3 tablespoons unsalted butter, melted

For the Cheesecake:
1 cup cottage cheese (2% or any kind)
¼ cup Greek yogurt (nonfat, 2%, or full-fat)
2 eggs
4 tablespoons sugar
1.5 tablespoons flour or cornstarch
½ teaspoon vanilla extract
Zest of Half a Lemon
Optional Toppings:
Yogurt
Fresh strawberries or fruit compote
Granola
Fresh Whipped Cream
Instructions
For the Graham Crust (Optional):
Preheat and Prep: Preheat your oven to 350°F (175°C) and grease a 6-inch springform pan. If doubling the recipe, use an 8- or 9-inch pan.
Mix the Crust: In a small bowl, combine graham cracker crumbs, sugar, and salt. Stir in melted butter until the mixture is evenly moistened.
Bake the Crust: Press the crumbs into the bottom of the prepared pan. Bake for 10–12 minutes, or until golden and fragrant. Let cool.

Blend the Batter: Combine cottage cheese, Greek yogurt, egg, sugar, flour (or cornstarch), vanilla extract, and lemon zest in a high-powered blender. Blend until smooth and creamy.
Pour and Bake: Pour the cheesecake batter into the prepared crust or directly into a greased 6-inch springform pan. Bake for 30–35 minutes, or until the edges are set with a matte surface and the center is slightly jiggly but not liquid.
Cool and Chill: Allow the cheesecake to cool to room temperature, then refrigerate for several hours or overnight.
