  • 8 oz bittersweet chocolate, chopped

  • ¼ cup unsalted butter

  • 1 teaspoon vanilla extract

  • Pinch of salt

Instructions

  • In a heatproof bowl, melt the chopped chocolate and butter together over a double boiler or in the microwave in 30-second intervals, stirring until smooth.

  • Stir in the vanilla extract and a pinch of salt. Set aside to cool slightly.

3. Whisk the Egg Yolks & Sugar

  • In a separate bowl, whisk the egg yolks and sugar together for about 1–2 minutes, until thick and pale in color. An electric hand mixer or mixer works best.

  • Sift in the cocoa powder and gently mix.

4. Beat the Egg Whites

  • In another clean, dry bowl, beat the egg whites with an electric mixer until soft peaks form (this will give the cakes a light texture).

5. Combine the Batter

  • Slowly fold the melted chocolate mixture into the egg yolk mixture.

  • Gently fold in the whipped egg whites, being careful not to overmix—you want to keep the batter light and airy.

6. Fill & Bake

  • Divide the batter evenly among the prepared ramekins.

  • Bake for 10–12 minutes, or until the edges are set but the center is still soft and slightly jiggly.

7. Serve Immediately

  • Let the cakes sit for 1 minute, then carefully invert each ramekin onto a plate and gently lift off.
