Why You’ll Love This Recipe

Made in the Blender – No lumps, no mess, and ready in seconds!✔ Thin, Light & Delicate – Just like classic French crepes.✔ Works for Sweet or Savory Fillings – A base recipe for endless possibilities.✔ Make-Ahead Friendly – The batter can be made in advance and stored in the fridge!

The Recipe: Easy Blender Crepes

Ingredients (Makes 10-12 Crepes)

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 ¼ cups milk (whole milk for best results)

  • 2 tablespoons melted butter

  • 1 tablespoon sugar (omit for savory crepes)

  • ½ teaspoon vanilla extract (omit for savory crepes)

  • ¼ teaspoon salt

📌 Optional Flavor Add-Ins:

  • For Sweet Crepes: Add ½ teaspoon cinnamon or a splash of almond extract.

  • For Savory Crepes: Add ¼ teaspoon black pepper or ½ teaspoon dried herbs.

Instructions

1. Blend the Batter

  • In a blender, add the flour, eggs, milk, melted butter, sugar, vanilla (if using), and salt.

  • Blend on high for 15–20 seconds until smooth and lump-free.

  • Let the batter rest for 10–15 minutes to allow the flour to hydrate. (For best results, refrigerate for up to 1 hour or overnight.)

📌 Pro Tip: Resting the batter improves the texture, making the crepes softer and easier to flip!

2. Cook the Crepes

  1. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter.

  2. Pour about ¼ cup of batter into the pan, swirling immediately to spread it into a thin, even layer. If your first few come out a little funky do not get discouraged, the pan heats better and they spread easier as time goes on.

  3. Cook for 60–90 seconds, until the edges start to lift and the bottom is lightly golden.

  4. Flip with a spatula and cook for another 30 seconds on the other side.

  5. Transfer to a plate and repeat with the remaining batter, stacking the crepes as you go.

📌 Pro Tip: If the batter thickens as it sits, stir in a splash of milk to thin it out before cooking.

Serving Ideas: Sweet & Savory Fillings

Sweet Crepe Fillings 🍓🍫

  • Classic Nutella & Bananas – Spread with Nutella and add sliced bananas.

  • Berries & Whipped Cream – Fill with fresh strawberries, raspberries, and a dollop of whipped cream.

  • Lemon & Sugar – A traditional French favorite—just sprinkle sugar and drizzle with lemon juice.

  • Peanut Butter & Honey – A protein-packed, sweet option.

  • Chocolate Ganache – Warm chocolate ganache drizzled over folded crepes.

Savory Crepe Fillings 🧀🥓

  • Ham & Cheese – Fold in warm ham and melted Gruyère or cheddar cheese.

  • Spinach & Feta – Sautéed spinach with crumbled feta and a sprinkle of black pepper.

  • Egg & Bacon – A perfect breakfast crepe with scrambled eggs and crispy bacon.

  • Mushroom & Goat Cheese – Earthy mushrooms and creamy goat cheese with a hint of thyme.

Tips for the Best Crepes

Use a Good Non-Stick Pan – This makes flipping much easier!✔ Swirl the Batter Quickly – Tilt the pan immediately to spread the batter thin.✔ Rest the Batter – This allows the flour to absorb the liquid, resulting in better texture.✔ Keep Them Warm – Stack crepes and cover with a tea towel to keep warm while cooking.✔ Make Them Ahead – Store cooked crepes in the fridge for up to 3 days, or freeze for up to 2 months.
