Instructions:

  1. Cream the butter and sugar: In the bowl of a stand mixer, beat the softened butter and dark brown sugar together until light and creamy, about 3–5 minutes.   2. Add wet ingredients: Mix in the egg and molasses, beating until fully combined.

  4. Chill the dough: Using a cookie scoop or two spoons, portion the dough into balls (about 2 tablespoons each). Place them on a parchment-lined baking sheet and freeze for 2 hours, or refrigerate until firm if baking later.

  5. Preheat the oven: When ready to bake, set your oven to 350°F and line two baking sheets with parchment paper.

  6. Roll in sugar (optional): For a sparkling, sweet crust, roll each dough ball in granulated sugar before placing them on the baking sheet.
