If you’re looking for a delicious, high-protein, and veggie-packed breakfast, these Green Spinach & Zucchini Egg Bites are a game-changer! Made with a creamy, cheesy egg base, blended spinach for a vibrant green color, and fresh zucchini slices for texture, these egg bites are perfect for busy mornings, meal prep, or a healthy snack on the go.

By blending the spinach into the egg mixture, you get an evenly distributed, nutrient-rich bite in every piece, while the zucchini slices add a fresh, mild crunch to each cup. And for the fluffiest, most tender egg bites, I have a simple trick—add a pan of water to the oven while preheating and baking!

The Recipe: Green Spinach & Zucchini Egg Bites

Ingredients:

  • 6 large eggs

  • 1 ¼ cups cottage cheese

  • 1 ¼ cups shredded mozzarella cheese

  • 2 tablespoons cornstarch

  • 1 garlic clove, minced

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 cup fresh spinach (to be blended into the mixture!)

  • 1 small zucchini, thinly sliced

  • Optional: add in a Cherry Tomato to the middle for the most delicious flavor

📌 Optional Add-Ins: Crumbled bacon, feta, or red pepper flakes for extra flavor!

Instructions:

Step 1: Preheat with a Pan of Water

  1. Preheat your oven to 315°F (175°C).

  2. Place a small oven-safe dish or pan filled with hot water on the lower rack while the oven preheats.

    📌 Why? The steam from the water keeps the egg bites extra soft and fluffy!

Step 2: Blend the Egg Mixture

  1. In a blender or food processor, combine eggs, cottage cheese, mozzarella cheese, cornstarch, garlic, salt, black pepper, and fresh spinach.

  2. Blend until completely smooth and creamy.

📌 Why Blend the Spinach? This ensures even distribution throughout the egg bites and gives them a gorgeous green color!

Step 3: Prep the Muffin Tin & Zucchini

  1. Heavily grease a 12-cup muffin tin. If you do not grease it well enough the egg bites will stick, I consider myself a semi crunchy person, but I always use Pam when greasing my egg bite pan!

  2. Place cubed zucchini into the bottom of each muffin cup.

📌 Why Add Zucchini Separately? It keeps the texture perfect—soft, but not soggy!

Step 4: Fill & Bake

  1. Pour the blended egg mixture evenly into each muffin cup, covering the zucchini.

  2. Bake for 20–25 minutes or until the egg bites are set and slightly golden on top. May take a little longer depending on the amount of zucchini.

📌 Pro Tip: Keep the pan of water in the oven while baking—this helps prevent dryness and creates the best texture! It turns the egg bites into a soufflé almost.

Step 5: Cool & Serve

  1. Let cool for 5 minutes before removing from the muffin tin.

  2. Enjoy immediately or store for meal prep!

📌 Pro Tip: Use a butter knife to gently loosen the edges before removing the egg bites!

🥡 To Store: Keep in an airtight container in the fridge for up to 5 days.🔥 To Reheat: Warm in the microwave for 30 seconds or enjoy cold.❄️ To Freeze: Freeze in an airtight bag and reheat as needed! My husband and I eat these almost every morning. I heat 4 for about 2 minutes and 30 seconds.
