The Recipe: Frozen Pizza Dough
Ingredients (Makes 3 Large Sheet Pan Pizzas or 6 Smaller Rounds):
12 cups all-purpose or bread flour
4 tbsp salt
3 ½ tsp yeast (instant or active dry)
5 cups warm water (add more if the dough is too dry)
2 tsp olive oil
Instructions:
Step 1: Make the Dough
In a large mixing bowl, whisk together flour, salt, and yeast.
Slowly add warm water while mixing. (Start with 5 cups and add more if needed.)
Add olive oil and knead the dough for 8–10 minutes until smooth and elastic.
I prefer to add everything into my stand mixer and let it do the work! It is so much easier!
Cover with a towel and let rise at room temperature for 1–2 hours or until doubled in size.
📌 Pro Tip: Using a stand mixer with a dough hook? Mix on low for about 8-10 minutes until smooth!
Step 2: Divide & Prep for Freezing
Once the dough has risen, divide it into 3-4 large portions (for sheet pan pizzas) or 5-6 smaller portions (for round pizzas).
Lightly coat each dough ball with olive oil to prevent sticking.
Place each dough ball in a Ziploc bag with a little extra olive oil.
Flatten slightly, seal, and freeze!

How to Thaw & Use Frozen Pizza Dough
Quick Thaw Method (Same Day Use):
Remove dough from the freezer.
Let it thaw at room temperature for 2–4 hours until soft and puffy.
Overnight Thaw (Best Method!):
Transfer dough from the freezer to the fridge the night before.
Let it sit at room temp for 1-2 Hours before stretching.
Or just take the dough out in the morning and stretch for dinner.
📌 Pro Tip: Once thawed, roll out the dough, top with your favorite ingredients, and bake at 425°F for 15-20 minutes until crispy! If you like a crispier pizza I recommend baking for 6 minutes before adding your topping. It helps the crust get crispier without all your toppings burning.
