If you love lasagna's rich, hearty flavors but want something a little easier and faster to make, this Lasagna Soup is for you! It’s packed with everything you love about traditional lasagna—savory meat, tender pasta, tangy tomatoes, and creamy cheese—but in a cozy, warming bowl of soup.

Perfect for busy weeknights or a comforting weekend dinner, this soup is hearty, flavorful, and sure to become a family favorite. Plus, it’s easy to customize with your favorite toppings and pasta shapes to make it your own.

The Recipe

Ingredients:

  • 4 Italian sausages (I did two sweet and two spicy)

  • 1/2 ground beef

  • 1 onion, diced

  • 3-5 cloves garlic, minced

  • 1 tablespoon of tomato paste

  • 1 jar of store-bought or homemade marinara sauce

  • 4 cups of chicken broth

  • 2 tablespoons tomato paste

  • 1 teaspoon dried basil

  • 1-2 teaspoon dried oregano

  • 1 teaspoon salt (adjust to taste)

  • 1 teaspoon black pepper

  • Optional: Parmesan Rind to add amazing flavor!

  • Veggies are optional and customizable; I chose: carrots, celery, parsnips, zucchini and spinach

  • 8 ounces lasagna noodles, broken into pieces (or any pasta of your choice)

    - Combine topping in a separate bowl and then spoon a small scoop on each bowl of soup

  • 1 cup ricotta cheese

  • ½ cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • Fresh basil for garnish

Instructions:

  1. Cook the meat: In a large pot or Dutch oven, cook the ground beef and Italian sausage over medium heat until browned. Drain any excess fat.

  2. Sauté the aromatics: Add the diced onion and garlic to the pot and cook until softened about 3–4 minutes. Then add the tomato paste and cook for an additional minute. Then add carrots, parsnips, and celery (if using)

  3. Add the liquids and seasonings: Stir in the marinara sauce, broth, basil, oregano, salt, and pepper. Bring the soup to a boil, then reduce the heat to a simmer. Optional: If you feel your sauce needs more flavor, add some onion and garlic powder. If you want a little more heat, add some crushed red pepper flakes.

  4. Cook the pasta and add zucchini: Add the broken lasagna noodles (or your preferred pasta) to the soup and cook until tender, about 10–12 minutes. Stir occasionally to prevent the pasta from sticking to the bottom of the pot.

  5. Make the cheese topping: In a small bowl, combine the ricotta, mozzarella, and Parmesan cheese.

  6. Serve: Ladle the hot soup into bowls and top each serving with a spoonful of the cheese mixture. Garnish with fresh basil for extra flavor.

Tips for Perfect Lasagna Soup

  • Customize the Pasta: If you don’t have lasagna noodles, any pasta shape will work—try bowties, rotini, or penne. Personally, I think a smaller noodle makes the soup more manageable to eat!

  • Make It Spicy: Add red pepper flakes or use spicy Italian sausage for a little heat.

  • Cheese Lovers: Feel free to add extra cheese to your liking! You can even stir some cheese directly into the soup for a creamier texture.

  • Leftovers: This soup thickens as it sits. When reheating, add a splash of broth or waterto bring it back to soup consistency.
