The Recipe: Marinated Asian Cucumber Salad

Ingredients:

  • 2 large English cucumbers (or 4-5 mini cucumbers)

  • ½ teaspoon salt

  • ¼ cup rice vinegar

  • 1 tablespoon soy sauce

  • 1 tablespoon toasted sesame oil

  • 1 teaspoon honey or maple syrup

  • 1 teaspoon grated fresh ginger

  • 1 clove garlic, minced

  • ½ teaspoon red pepper flakes (adjust to taste)

  • 1 tablespoon sesame seeds (optional)

  • 2 green onions, sliced thin (optional)

📌 Optional Add-Ins:

  • Thinly sliced red onion for extra bite.

  • Crushed peanuts or cashews for crunch.

  • A splash of sriracha for some heat.

Instructions:

1. Slice the Cucumbers

  • Thinly slice the cucumbers into rounds or half-moons, depending on your preference.

  • Place them in a bowl and sprinkle with salt.

  • Let sit for 5-10 minutes to draw out excess water, then pat dry with a paper towel.

2. Make the Dressing
