🥗Simple, Tangy & Make-Ahead Friendly
Some recipes are so simple, they don’t even feel like recipes—just little rhythms in your kitchen that make life easier and more delicious. This vinaigrette-style salad dressing is one of those things I always come back to. It’s quick, flavorful, and made with ingredients I always have on hand.
I love it drizzled over a crisp romaine or arugula salad, tossed into a grain bowl, or even used as a quick marinade for roasted veggies or chicken. It’s the kind of dressing you can whisk together in 60 seconds for a single meal—or batch ahead for the week so you’re never stuck with a dry salad again.

📝 Ingredients
1 teaspoon Dijon mustard
2 tablespoons lemon juice (fresh is best!)
2 tablespoons red wine vinegar
⅓ cup olive oil
½ teaspoon salt, or to taste
¼ teaspoon black pepper
½ teaspoon dried oregano (or Italian seasoning)
👩🍳 Instructions
Mix It Up In a small jar or bowl, whisk together the mustard, lemon juice, and vinegar. Slowly drizzle in the olive oil while whisking until emulsified.
Season Add salt, pepper, and dried oregano. Taste and adjust to your liking (more lemon for brightness, more oil for richness, etc.).
Store or Serve Use immediately or store in a sealed jar in the fridge for up to 1 week. Just give it a good shake before using.
💡 Weeknight Tips
This is a great “back-pocket” recipe to keep you from buying store-bought dressings.
It doubles beautifully—just store it in a mason jar and shake before serving.
Add a spoonful of Greek yogurt or tahini to make it creamy!
Delicious over leafy greens, tomato salads, pasta salads, or even warm roasted potatoes.
✨ Final Thoughts
Homemade salad dressing might feel small, but it’s one of those things that can totally shift the tone of your meal—from “eh” to elegant. And in true Weeknight Homemaker fashion, it’s something you can do once and benefit from all week.
Let me know if this becomes a staple in your kitchen too!
