The Recipe: One-Pan Chicken Fajitas

Ingredients:

  • 2 cups precooked shredded chicken (rotisserie chicken works great!)

    • On Sundays I will open precook a couple extra chicken breasts so I have an easy and healthy protein ready for lunch or dinner throughout the week.

  • 2 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced - if you only have one color of bell pepper that is totally fine just use what you have on hand!

  • 1 medium onion, sliced

  • 4 cloves garlic, minced

  • 1 tsp chili powder

  • 1 tsp cumin

  • ½ tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ½ tsp black pepper

  • Juice of 1 lime

  • ¼ cup fresh cilantro, chopped (optional)

📌 Optional Add-Ins: Black beans, corn, avocado slices, or jalapeños for extra heat!

Instructions:

Step 1: Sauté the Peppers & Onions

  1. Heat 2 tbsp olive oil in a large skillet over medium-high heat.

  2. Add sliced bell peppers and onion and cook for 5–7 minutes, stirring occasionally, until softened and slightly caramelized.

📌 Want a smoky char? Let the veggies sit undisturbed for a minute before stirring!

Step 2: Add the Chicken & Spices

  1. Add shredded chicken, minced garlic, and all spices (chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper) to the pan.

  2. Stir everything together and cook for another 3–5 minutes, until the chicken is heated through and well coated in the spices.

📌 Shortcut Tip: If using store-bought fajita seasoning, replace the spices with 1 tbsp of a fajita seasoning mix.

Step 3: Finish with Lime & Cilantro

  1. Squeeze the juice of 1 lime over the fajitas and stir in fresh cilantro.

  2. Remove from heat and serve immediately.
