Simple, Sweet, and So Cozy

There’s something so nostalgic about a bubbling fruit cobbler—it’s one of those desserts that brings you right back to slow summer evenings, barefoot in the kitchen, waiting for the timer to ding.

This peach blueberry cobbler is my go-to when I want something easy, seasonal, and soul-satisfying. The combination of sweet peaches and juicy blueberries creates the perfect balance of bright and comforting. And the oat crumble topping? It’s the same one I use in all my cobblers—simple, rustic, and always a hit.

Whether you serve it warm with a scoop of vanilla ice cream or sneak a spoonful cold the next morning (guilty), this cobbler is a Weeknight Homemaker classic.

📝 Ingredients

For the Filling:

  • 4 cups sliced peaches (fresh or frozen)

  • 1 ½ cups blueberries (fresh or frozen)

  • ¼ cup granulated sugar

  • 1 tablespoon lemon juice

  • 1 tablespoon cornstarch (or flour)

  • ½ teaspoon vanilla extract

If using frozen fruit, no need to thaw—just add a few extra minutes to the bake time.

For the Crumble Topping:

  • 1 cup old-fashioned oats

  • ½ cup all-purpose flour

  • ½ cup brown sugar

  • ½ cup (1 stick) cold butter, cubed

  • ½ teaspoon cinnamon

  • Pinch of salt

👩‍🍳 Instructions

  1. Preheat your oven to 350°F. Lightly grease an 8x8 or 9x9 baking dish. I prefer to use a pie dish!

  2. Make the filling: In a large bowl, gently toss the peaches and blueberries with sugar, lemon juice, cornstarch, and vanilla. Pour into the baking dish and spread evenly.

  3. Make the crumble: In a separate bowl, mix oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter using your fingers or a pastry blender until crumbly.

  4. Top and bake: Sprinkle the crumble evenly over the fruit. Bake for 40–45 minutes, or until the top is golden and the fruit is bubbling at the edges.

  5. Cool slightly and serve: Best served warm with vanilla ice cream or whipped cream.

💡 Homemaker Tips

  • Double the topping if you love a thick crumble layer (I always do!).

  • This dessert is perfect for using up soft peaches or summer blueberries before they go bad.

  • It keeps well in the fridge—just warm it up for 30 seconds in the microwave the next day.

✨ Final Thoughts

Peach blueberry cobbler is one of those desserts that feels fancy but is actually wonderfully simple—my favorite kind. It’s forgiving, adaptable, and always feels like a hug in a dish. Whether you’re making it for guests or just for yourself on a quiet evening, this recipe is the kind of sweetness that makes home feel extra cozy.

Let me know if you bake it—I’d love to hear if you’re team ice cream or whipped cream!
