The Recipe: Peach & Burrata Salad with Mixed Greens
Ingredients (Serves 2–3 as a main or 4 as a side):
3–4 cups mixed greens (arugula, spinach, spring mix, etc.)
2 ripe peaches, sliced thin
1 ball burrata cheese (or 2 small if serving more)
2 tbsp extra virgin olive oil
1–2 tbsp balsamic glaze or aged balsamic vinegar
teaspoon of Dijon mustard
teaspoon of honey
Flaky sea salt & freshly cracked black pepper
Optional: toasted almonds, pistachios, or prosciutto for extra flair
Instructions:
On a large platter or shallow bowl, spread the mixed greens as a base.
Arrange the peach slices over the greens.
Gently tear open the burrata and place it in the center (or scatter small pieces).
Drizzle over with dressing.
Finish with flaky sea salt, fresh cracked pepper, and any optional toppings.
Serve immediately, with a slice of crusty bread or grilled protein if desired.
Quick Add-On: The Best Pan-Seared Chicken 🍳
Want to round this out with a protein? This juicy, golden pan-seared chicken pairs perfectly:
Ingredients:
2 boneless, skinless chicken breasts
Salt, pepper, and garlic powder
1–2 tbsp olive oil or butter
Instructions:
Pat chicken dry and season both sides generously.
Heat oil in a skillet over medium-high heat.
Sear chicken for 5–6 minutes per side, or until golden brown and cooked through (internal temp of 165°F). If your chicken breasts are thick, this may take a little longer! Be patient and wait for a nice sear!
Let rest 5 minutes before slicing.
✨ Pro Tip: Slice and serve warm over your salad or on the side with a wedge of lemon!
Tips & Pairings
🍞 Pair with sourdough or focaccia🍷 Serve with sparkling water with lemon🌿 Add fresh basil or mint for an herbaceous twist🥓 Crumbled bacon or prosciutto = perfect salty contrast
