Warm, Cozy, and Just Sweet Enough: My Favorite Pumpkin Oat Loaf

There’s something about the smell of pumpkin spice that instantly makes everything feel a little warmer, a little softer, and a whole lot cozier. As soon as the leaves start to turn, I find myself reaching for all things pumpkin—and this Pumpkin Oat Loaf has become my go-to.

It’s the kind of loaf you’ll want to keep on the counter all week (if it lasts that long). Moist, gently spiced, and just the right balance of hearty and sweet, this loaf comes together with pantry staples and a few seasonal favorites. It’s just as happy being a quick breakfast as it is a companion to your afternoon coffee or tea.

Pumpkin Oat Loaf Recipe

Ingredients:

  • 1 can pumpkin puree (about 15 oz)

  • 2 tsp cinnamon

  • 1 tsp ground ginger

  • ¼ tsp ground cloves

  • ¼ tsp ground nutmeg

  • ½ cup yogurt or sour cream

  • 2 eggs

  • 1 stick (½ cup) melted butter

  • 1 tsp baking soda

  • 1 cup oats (old-fashioned or quick oats)

  • 1 and 1/2 to 2 cup all-purpose flour (or a mix of whole wheat and all-purpose)

  • ¼ cup maple syrup

  • 1 tsp vanilla extract

Optional Add-ins:

  • Chopped nuts (walnuts or pecans)

  • Chocolate chips

  • Raisins or dried cranberries

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

  2. In a large mixing bowl, whisk together the pumpkin, yogurt (or sour cream), eggs, melted butter, maple syrup, and vanilla until smooth.

  3. Add in the spices, baking soda, oats, and flour. Stir until just combined—don’t overmix!

  4. Fold in any optional add-ins you like (I’m partial to chopped walnuts or a handful of dark chocolate chips when I’m feeling indulgent). But, this loaf is amazing on its own!

  5. Pour the batter into your prepared loaf pan and smooth the top. If you’re feeling fancy, sprinkle a few extra oats or some cinnamon sugar on top.

  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely (if you can wait that long).

Serving Ideas:

  • Toasted with butter or cream cheese

  • With a drizzle of maple syrup or honey

  • Packed in a lunchbox or served with coffee
