The Recipe: Sheet Pan Lamb Meatballs

Ingredients (Makes ~20 meatballs):

  • 1 lb ground lamb or ground beef

  • ½ cup breadcrumbs (panko or regular)

  • 1/4 cup olive oil

  • 1 egg

  • 2 cloves garlic, minced

  • 2 tbsp fresh basil (or 1 tsp dried)

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1/4 cup grated onion

  • 1 tablespoon chopped mint

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 tbsp olive oil (for drizzling)

Instructions

Step 1: Preheat the Oven

  • Preheat oven to 425°F. Line a sheet pan with parchment paper or lightly grease it.

Step 2: Mix the Meatballs

  • In a large bowl, combine bread crumbs and olive oil. Allow the olive oil to coat and moisten the bread crumbs. Then add all other ingredients besides the ground beef. Stir well. Then add ground beef last.

  • Mix gently with your hands or a fork until just combined—don’t overmix.

  • If time permits, mix the meatballs early in the day and then put in the fridge. This will infuse the meat with tons of flavor, but if you do not have the time, they will still be delicious.

Step 3: Shape the Meatballs

  • Roll mixture into 1 ½-inch balls and place evenly on the prepared sheet pan. I like to use a large cookie dough ball scoop.

  • Drizzle lightly with olive oil.

Step 4: Bake

  • Bake for 18–20 minutes, flipping halfway, until browned on the outside and cooked through (internal temp ~160°F).

Step 5: Serve & Enjoy

  • Serve warm with yogurt sauce, pita, or over grains and roasted vegetables.
