Slow Cooker Chicken Curry🍛

A Weeknight Win

There’s something so comforting about a pot of curry simmering all day, especially when you barely had to do anything to make it happen. This slow cooker chicken curry is one of my favorite weeknight meals—it’s flavorful, cozy, and requires just a few minutes of prep before you head out the door.

The best part? You get to come home to a warm, nourishing dinner that smells like you spent hours in the kitchen. (When in reality, your crock pot did all the work.)

📝 Ingredients

  • 3 -4 pounds boneless, skinless chicken breasts

  • 1 onion, finely chopped

  • 4 Carrots Chopped

  • 4 Celery Stocks Chopped

  • 3-4 cubes sweet potatoes

  • 3–4 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated (or 1 tsp ground)

  • 2 tablespoons curry powder

  • 1 teaspoon garam masala (optional, but so good)

  • 1 teaspoon salt

  • ½ teaspoon turmeric

  • 1 (14 oz) can coconut milk

  • 1 tablespoon tomato paste

  • 2 Cups of Chicken Broth

  • Optional: ½ cup frozen peas, stirred in at the end

  • Serve with: cooked rice, naan, or roasted veggies

🥣 Instructions

1. Add Everything to the Crock Pot

2. Cook on LOW for 6–8 hours or HIGH for 3–4 hours

The chicken should be tender and infused with all those warm spices. It’ll practically fall apart when stirred. If you put it on before work just put it on low all day and turn on high when you get home.

3. Optional Finish

About 20 minutes before serving, stir in peas or a handful of spinach if you’d like to sneak in some greens. Or Add frozen peas then.

4. Serve

Spoon over warm rice, top with chopped cilantro, or scoop with naan for the coziest dinner.

💡 Weeknight Homemaker Tips

  • Make it ahead: You can prep the ingredients the night before in a bag or container, then dump it in the crock pot in the morning.

  • Use what you have: Don’t stress if you’re missing garam masala or turmeric. Curry powder alone still gives it great flavor.

  • Freeze leftovers for another night—this reheats beautifully.
