There is nothing — truly nothing — like the smell of fresh, homemade dinner rolls coming out of the oven. These Amish Dinner Rolls are soft, fluffy, slightly sweet, and unbelievably pillowy. They’re the kind of rolls that make any meal feel special, whether you’re serving them with Sunday pot roast, Thanksgiving dinner, or a simple weeknight soup.

This recipe uses one magical ingredient that gives the rolls their signature softness: potato flakes. They help keep the dough tender and moist, giving you that perfect melt-in-your-mouth texture Amish rolls are known for.
They’re simple, reliable, and SO good that you’ll want to double the batch every time.

Ingredients
3/4 cup warm milk
1/2 cup warm water
1/4 cup softened butter
3/4 cup potato flakes
1 egg
1/4 cup sugar
3 3/4 cups flour
1 teaspoon salt
2 1/4 teaspoons yeast (one packet)
How to Make Amish Dinner Rolls
1. Combine all ingredients
In a large bowl, combine the warm water, warm milk, sugar, and yeast. Let it sit for about 5–10 minutes, until it becomes foamy.
2. Knead
Knead for 6–8 minutes on a lightly floured surface (or in a stand mixer with a dough hook) until smooth and elastic.
3. First rise
Place the dough in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.
4. Shape
Punch the dough down and divide into 12–16 rolls, depending on your preferred size. Shape into smooth balls and place in a greased baking dish. About 50-60 grams per roll is the perfect size!
5. Second rise
Cover and let rise another 30–45 minutes, until puffy.
6. Bake
Bake at 350°F for 18–22 minutes, until the tops are golden brown. Brush with melted butter while warm and top with flaky sea salt.
Tips for Perfect Rolls
Make sure your milk and water are warm, not hot, to avoid killing the yeast.
Potato flakes make the rolls extra soft — don’t skip them!
If your kitchen is cold, let the dough rise in a slightly warmed (but turned off!) oven.
Don’t overbake — soft rolls are everything.
These freeze beautifully, both baked and unbaked.
