There’s nothing better than waking up to the smell of freshly baked sourdough cinnamon rolls. These rolls are soft, fluffy, and slightly tangy from the sourdough starter, balanced perfectly with a gooey cinnamon-sugar filling and a rich, buttery frosting.
This recipe is my go-to sourdough dough, which can also be used for burger buns, dinner rolls, or sandwich bread! But today, we’re making the ultimate cinnamon rolls—and trust me, once you try these, you won’t go back to store-bought!

The Recipe: Sourdough Cinnamon Rolls
For the Dough:
150g active sourdough starter
250g water
4 tbsp butter, melted
15g milk
9g salt
12g honey
500g all-purpose flour

For the Cinnamon-Sugar Filling:
4 tbsp butter, softened
½ cup brown sugar
2 tbsp cinnamon
For the Frosting:
2 tbsp butter, melted
2 tbsp milk
Powdered sugar (to desired thickness!)
📌 Pro Tip: Start with a little liquid, then slowly add powdered sugar until you reach the perfect consistency!
Instructions:
Step 1: Make the Dough
In a large bowl, combine sourdough starter, water, flour, honey, and salt.
In a separate bowl, melt the butter, then stir in the milk (this tempers the butter so it doesn’t overheat the dough).
Add the butter-milk mixture to the dough and knead for 8–10 minutes until smooth and elastic.
Cover with a damp towel and let rise in a warm place until doubled in size (this can take 6–12 hours, depending on room temperature).
📌 Pro Tip: If your home is cool, let the dough rise overnight for maximum flavor and fluffiness!
Step 2: Shape the Cinnamon Rolls
Once the dough has doubled, divide it into two equal parts.
Roll out one portion into a large rectangle (about ¼-inch thick).
Spread softened butter evenly over the dough.
Sprinkle brown sugar + cinnamon mixture over the butter.
Roll the dough tightly into a log, then cut into 8–10 rolls.
Place rolls into a greased baking dish, leaving a little space between them.
📌 Want extra gooey rolls? Drizzle a little melted butter over the tops before the second rise!
Step 3: Second Rise & Bake
Cover the rolls and let them rise again until puffy and fluffy (about 2–4 hours).
Preheat oven to 350°F (175°C).
Bake for 35–40 minutes, or until golden brown on top.

Dinner rolls & burger buns: 20 minutes
Loaf bread: 45–50 minutes
Step 4: Make the Frosting & Serve
While the rolls cool, melt butter and mix with milk.
Gradually whisk in powdered sugar until you reach your desired thickness.
Drizzle or spread the frosting over the warm cinnamon rolls.
Serve immediately and enjoy every gooey, cinnamon-filled bite!
