The Recipe: Sourdough Sandwich Bread & Buns

Ingredients:

  • 150g active sourdough starter

  • 250g water

  • 4 tbsp butter, melted

  • 15g milk

  • 9g salt

  • 12g honey

  • 500g all-purpose flour

Instructions:

Step 1: Mix & Knead the Dough

  1. In a large mixing bowl, combine sourdough starter, water, flour, honey, and salt.

  2. In a separate bowl, melt the butter, then stir in the milk.

  3. Add the butter-milk mixture to the dough and knead for 8–10 minutes until smooth and elastic.

  4. Cover and let rise in a warm place until doubled in size (about 6–12 hours).

📌 Slow Rise Option: If you prefer, let the dough rise overnight for even better flavor!

Step 2: Shape for Sandwich Bread, Buns, or Rolls

📌 For Sandwich Bread:5. Lightly grease a loaf pan.6. Shape the dough into a tight log and place it in the pan.7. Cover and let rise again until puffy and just above the pan’s edge (about 2–4 hours).

📌 For Burger Buns or Dinner Rolls:5. Divide the dough into 8 equal portions for burger buns or 12 smaller portions for dinner rolls.6. Shape into smooth, round balls and place them on a lined baking sheet.7. Cover and let rise until light and fluffy.

Step 3: Bake to Perfection

  1. Preheat oven to 350°F (175°C).

  2. Bake according to your shape:

    • Sandwich Loaf: 45–50 minutes

    • Burger Buns & Dinner Rolls: 20 minutes

  3. Once baked, immediately rub butter on top to keep them soft.
