🥞Weekend-Worthy + Freezer-Friendly

There’s something so comforting about making pancakes from scratch. It’s one of those quiet rituals that makes the morning feel slower, softer, and more intentional—whether it’s a slow Saturday with coffee and music, or a “breakfast for dinner” kind of weeknight.

These pancakes are my go-to base recipe because they always turn out just right: soft, fluffy, golden-edged, and just sweet enough to enjoy with maple syrup, jam, or a little swipe of butter. They’re simple, dependable, and always a hit.

And my favorite homemaker tip? Make a double batch and freeze the extras—so you have warm, homemade pancakes on even the busiest weekday morning.

📝 Ingredients

  • 6 tablespoons melted butter

  • 2 ¼ cups all-purpose flour

  • ⅓ cup granulated sugar

  • 1 ¼ teaspoons baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 2 large eggs

  • 2 cups buttermilk

  • 1 teaspoon vanilla extract

👩‍🍳 Instructions

  1. Prep the Wet Ingredients: In a large bowl, whisk together the melted butter, eggs, buttermilk, and vanilla. Set aside.

  2. Mix the Dry Ingredients: In a separate bowl, stir together the flour, sugar, baking powder, baking soda, and salt.

  3. Combine & Rest: Pour the dry ingredients into the wet and mix gently until just combined. A few lumps are okay! Let the batter rest for about 5–10 minutes—this helps the pancakes puff up extra fluffy.

  4. Cook the Pancakes: Heat a griddle or nonstick skillet over medium heat and grease lightly with butter or oil. Pour about ¼ cup of batter for each pancake. Cook until bubbles form on the surface and the edges look set, then flip and cook the other side until golden brown.

  5. Serve Warm: Stack ‘em high and serve with maple syrup, fruit, butter, or even whipped cream for a fun twist.

❄️ Freezer Tip

Double your batch and freeze leftover pancakes in a single layer on a baking sheet. Once frozen, transfer them to a zip-top bag. To reheat, just pop them in the toaster or toaster oven for a few minutes. Breakfast is ready in seconds—no boxed mix required!

💡 Homemaker Tips

  • No buttermilk? Mix 2 cups milk + 2 tablespoons vinegar or lemon juice and let sit 5 minutes.

  • These make a great snack for little ones or after-school treat with peanut butter and banana.

  • Want variety? Add blueberries, chocolate chips, or a dash of cinnamon to the batter.

✨ Final Thoughts

Homemade pancakes are one of those small things that make a big difference in the rhythm of home. Whether you’re making them on a slow morning or pulling a few from the freezer before work, they bring warmth and joy to the day.

Let me know if you make them! I’d love to see how you top yours—team butter + maple syrup forever over here.
