The Recipe

For the Steaks:

  • 2 ribeye, strip, filet mignon steaks, NY Strips (1.5–2 inches thick)

  • Kosher salt and freshly ground black pepper

For the Red Wine Reduction Sauce:

  • 1 tablespoon of butter

  • 1 shallot, finely minced

  • 2 cloves garlic, minced

  • 1+ cup dry red wine (Cabernet Sauvignon or Merlot work beautifully)

  • 1 tablespoon cold butter

  • Salt and pepper to taste

Instructions

1. Season the Steaks

  • Pat the steaks dry and season generously with kosher salt and pepper. Let them sit at room temperature for 30–45 minutes to absorb the seasoning.

2. Bake the Steaks

  • Preheat your oven to 250°F (120°C). Put steaks with a pad of butter on top, then wrap them in parchment and tin foil.

  • Bake for 20–30 minutes or until they reach your desired internal temperature:

    • 125°F for medium-rare

    • 135°F for medium

  • Use an instant-read thermometer for accuracy.

3. Make the Red Wine Reduction Sauce

  • While the steaks are in the oven, heat butter in a small saucepan over medium heat. Add the minced shallot and garlic (optional), cooking until softened and fragrant, about 5 minutes.

  • Pour in the red wine, scraping up any browned bits from the pan.

  • Simmer until reduced by half, about 10–15 minutes.

  • Stir in the butter for a silky finish and season with salt and pepper to taste. Keep warm until ready to serve.

4. Sear the Steaks

  • Heat a heavy skillet (cast iron works best) over high heat. Add a tablespoon of olive oil or butter.

  • Once the skillet is very hot, sear the steaks for 1–2 minutes per side until a deep, golden crust forms. For thicker steaks, sear the edges as well. Baste with oil or butter with rosemary.

5. Rest and Serve

  • Let the steaks rest for 10 minutes to allow the juices to redistribute. Cover with tinfoil while resting.
