Made with a bubbly, active sourdough starter, these pitas develop a wonderful depth of flavor without the need for commercial yeast. You can use a mix of whole wheat and white flour for a hearty texture, or go all white flour for a softer, fluffier result—the choice is yours!

Instructions

Step 1: Mix & Knead the Dough

  1. In a large mixing bowl, combine the sourdough starter, water, and sugar. Stir until mixed.

  2. Add the flour and salt, mixing with a spoon or hands until a shaggy dough forms.

  3. Drizzle in olive oil and knead for 8–10 minutes until the dough becomes smooth and elastic.

📌 Pro Tip: The dough should be soft but not sticky. If it’s too dry, add a little water (1 tbsp at a time).

Step 2: First Rise (Bulk Fermentation)

  1. Place the dough in an oiled bowl, cover with a damp towel, and let it rise at room temperature for 6–8 hours or until doubled in size.

Step 3: Divide & Shape
