The Recipe: Light & Creamy Chicken Salad
Ingredients:
½ cup non-fat Greek yogurt (+ extra if needed)
¼ cup mayo (adds a little richness!)
1 tbsp Dijon mustard
2 tsp honey
¾ tsp kosher salt
¾ tsp onion powder
½ tsp garlic powder
Fresh cracked black pepper to taste
2 ½ cups cooked chicken, cubed, diced, or shredded (rotisserie chicken works great!)
1 cup finely diced celery (for that perfect crunch!)
1 cup roasted cashew or walnut halves & pieces (optional)
Sliced Red Grapes (so delicious but optional because they do not last as well)
Zest of 1 whole lemon + juice
📌 Need more creaminess? Add an extra ½ cup of Greek yogurt if the chicken is dry!
Instructions:
Step 1: Make the Dressing
In a large mixing bowl, whisk together Greek yogurt, mayo, Dijon mustard, honey, salt, onion powder, garlic powder, and black pepper.
Stir in lemon zest and a squeeze of lemon juice for a fresh, bright flavor.

Step 2: Shred & Mix (KitchenAid Hack!)
Place cooked chicken into a stand mixer fitted with the paddle attachment.
Pour in the dressing and turn the mixer to low speed for about 30 seconds, letting it gently shred and mix everything together.
Add celery, nuts and or grapes.
📌 Time-Saving Hack: The KitchenAid does all the work—shredding the chicken and evenly mixing the dressing in one step! No forks needed! I like to even just add all the ingirdents into the bowl and then letting the KitchenAid do all the work.
Step 3: Add the Crunch!
Stir in celery and nuts last to keep them fresh and crunchy.
If the salad seems too thick, add an extra scoop of Greek yogurt to loosen it up.
